If an e-SIM-enabled phone has a SIM card in it (being used), what happens to the phone's existing voice/SMS services if an e-SIM data plan from a separate operator is added?

Typically the physical SIM keeps voice and SMS; you can set the eSIM as the data line. Both can work side by side.
